秀厨艺~Chilled Lemon Cheese Cake + Pai Kut Wang

看到家里久久放在冰箱里的柠檬,心血来潮想说来做个柠檬芝司蛋糕好了。这不是我第一次做蛋糕,不过对上一次已经好久之前了。
Looking at the lemons in our fridge, I get an idea to make a chilled lemon cheese cake during the off-work weekend. This is not my first time for baking cakes, but it has been a very long time ago since my last baking.

依照食谱上的步骤,芝司蛋糕的面糊也差不多完成了,最后再加入柠檬皮。柠檬皮是很香的,加入蛋糕里面的话更可以增添一份芬芳的味道。不过前提是要削得很薄,因为我们只可以取黄色皮的部分,白色的纤维会带来苦味。
Following every procedure in the recipe, the cheese batter is almost done. Before completing the cake, I added in some zest of lemon. The zest can add in more lemon fragrance to the cake. However, we have to slice it very carefully, as we only want the thin yellow layer. This is to prevent the bitter favor from most of the fruit's peel. The white layer under the yellow layer is actually the one that provide the bitter favor.

冷冻了两个小时后,我把蛋糕从模型中取出。有个不祥的预感,因为先前在弄饼干底层的时候,牛油放得太少,所以一部分的饼干也散开来了!啊。。。。。。
After chilling for 2 hours, it's time for me to remove it from the cake mould. But I have a "not-so-good" feeling, as when I was doing the biscuit base, I added too little of melted butter, so when I remove the cake from the mould, some of the biscuits fall off. arghh....

不过卖相看起来还蛮漂亮的,不管三七二十一了,拍下照片再算吧!因为刚吃过晚餐,肚子饱饱的,所以拍完照就把蛋糕放回冰箱里,明天再吃吧!
But in fact, the outlook of the cake is quite nice...hehe^^. So I quickly snap some photo before bothering so much. I keep it back to the fridge after snapping session because I'm just had my dinner. Let's try it the next day!



今天早上醒来后,第一件事就想到我的蛋糕!刀子一切下去,饼干果然都散开了!饼干很香,可是却吃不到,好不满足哦!
The first thing that came into my mind was my cheese cake after waking up this morning. To my disappointment, the biscuit base falls when I cut the cake. =(

心有不服,吃过午饭,我就一直在想,可以不可以挽救呢?结果让我想到了一个办法!
To my dissatisfaction, I keep thinking whether there is anything that I could do to "save" my cake? *Bling* I got an idea!

我把蛋糕反过来,饼干底层朝上。把掉在盘上的饼碎再加上新的饼碎,融了牛油一起搅拌, 然后再次涂上蛋糕,然后放回冰箱冷冻一下!果然,我的方法是可行的,拯救行动算是成功!=D
I turned the cake upside down with the biscuit base face up. Melt some butter, crash some biscuit and mix with the fall-off biscuit, once again put it on top of the upside down cake. Chilled it for a while in the fridge. My "cake-saving" mission turned out to be quite successful! =D

虽然卖相不比之前好看,不过这一口蛋糕吃得很满足,饼干是好吃的!至于蛋糕的部分嘛,我觉得还有待加强,因为不够软绵,没有入口即化的感觉!
Although the outlook is not as good as before, but this bite was very satisfaction, the biscuit is a good one! For the cake, I feel that it is not soft enough, I still have a lot of improvement to get a cheese cake that will melt in the mouth!

今天,靓妈破天荒地准备午餐,我也大显身手弄了一道拿手的排骨王。因为家里没了“红毛酱油”(kip chap),所以调酱料的时候,我改用中式酱油,可能出手太重,稍咸了点!不过配饭还是美味地。。。呵呵!这可是我很有把握的得意之作呐!=P
Pretty mum prepare lunch today, I also contribute my all-time-favourite~Pai Kut Wang. But maybe I add too much of soya sauce into the gravy, so it turned out a bit salty. However, it is indeed a delicious dish with rice....hehe! Of cause, this is my signature dish!

另外,靓妈准备了罗汉斋和白萝卜汤。

Siuyun's Kitchen~秀厨艺

这个星期大部分的时间都不在家,所以只煮了两天的晚餐。简简单单,有菜有汤有肉,就解决了晚餐的烦恼。这次的菜单是:清炒四季豆,炸豆腐,西洋菜汤,蚝油炒椰菜花,鸡蛋冬菜蒸猪肉。
I just prepared 2 nights of dinner this week since most of the time I was not home for dinner. Simple dishes with vege, soup and meat makes my dinner easier. Well, my menu for this week are stir fried string beans, deep fried taofu, watercress soup(sai yeung choi),oyster sauce broccoli and egg steam pork with dong cai.

Siuyun's Kitchen~秀厨艺

Yeah...星期五咯!前几天到超市买了鸡翅膀,很便宜哦,8只鸡翼才大概RM5.50。我也没注意到截止日期,结果买回家后,妈妈一看,糟啦,31/7/2009就坏了,难怪那么便宜。所以今天就把它给煮了,还好周六是休息天,今晚可以弄点复杂的。
It's Friday again!! I bought a pack of chicken wings in a hypermarket few days ago. It's kinda cheap, 8 wings just cost me about 6 bucks. However, I didn't notice the expiry date. It's TODAY! No wonder it's so cheap. Luckily no need to work on weekends, so I decided to settle it tonight.

我把一只鸡翼分为两种做法,小鸡腿的部分只是腌了一些蚝油,酱油,糖等调味料,然后下锅炸,而翅膀的部分,我去骨腌制后,再塞入芝司,然后一样拿去炸。这是第一次学着这样弄,不过我这贪心鬼塞太多芝司了,而且鸡皮很薄,炸的时候有一些溢出来了,整个锅都沾满了芝司。还好,出来的结果还过得去。既然做了一道还蛮考功夫的菜,另一道就简简单单把菜和红萝卜川烫,然后摆盘(我自己觉得摆盘还蛮重要的,可以帮助增进食欲),再加入蚝油,和之前炒起的蒜头油,就弄好一个油菜了。
I cooked the wings in 2 different ways. First of all, I seasoned the little drumstick part with some oyster sauce, soya sauce, sugar and etc., then just fried it.The wings part need more work on it. I take out the bones, seasoned, and fill with cheese, kind of thread it up with toothpick, then fried it as well. This is my very first time on this dish. The greedy me fiil in too much cheese in the wings, it ends up some of the cheese oozing out from the wings. Luckily, the outcomes is not too bad. Since the wings dish takes me lots of work, I chose to prepare an easy one for the next dish. Fly the vege with hot water, display it on a plate, applying some oyster sauce and top with fried garlic and oil, this is what we called "yao choi". And my dinner is done!

你有没有擦觉出什么来啦?有没有发现,8只鸡翼怎么只剩下5个拳头?嘻,另外3个在盘中间,我错误地把骨头给去掉了!还好妹妹及时发现,不然我铁定把所有拳头的骨头都给去掉。

Siuyun's Kitchen~秀厨艺

看过了妈妈们的味道,该是我秀一秀厨艺的时候了,=P。最近,心血来潮,不知吹什么西北风,我又拿起锅铲了。大多是一些简单方便的,因为我都是放工回家后才开始煮,所以高难度的就没了,免得饿坏我和妹的肚子。
It's my time to share about Siuyun's Kitchen...=P.Recently, I just have a good mood to cook. Most of the dishes is quite simple, since I start cooking after work, so better forget about the complicated one else we might have to starve...=D

这些是我流浪外头时的健康晚餐,得意之作。
These are the dishes well prepared by myself when I'm out of home. ^^

咖喱鸡,三色炒面,酸辣大虾,ABC汤,福建快熟面(这个不健康=P),羊扒
Curry chicken, Fried noodle,Big prawn,ABC soup,Hokkien Instant Maggie(this is not healthy =P),Lamb chop


上海菜汤(榨菜汤),大葱蛋,午餐肉,番薯粥,蒸蛋,猪肉罐头,椰菜花,榨菜蛋,豆苗

酱油蒸豆腐(日本豆腐切块,香菇红萝卜切丁。蒸好后,撒上少许胡椒粉和炸蒜提味。

妈妈的味道

妈妈好久没有下厨了,难得这一次在我们双剑合璧之下武出的菜肴,就把它拍下来。我想之后如果妈妈再次下厨的话,我也会把它拍下,因为机会是少之又少,也因为爸妈晚上要开档。其中有几道菜,是上一回我到大头家时,他妈妈的杰作。
It has been a while since mum's last cooking. So I've captured the foods' photo which I'm also helping to cook it...=). I think I will take more photo when she cook again next time because the chances is less since she have to open stall at night.Some of the dishes is prepared by dear's mum during my last visit to his house.






菜色都很清淡,除了那个炸鸡,呵呵。还不错,嫌不得,因为我有份煮的,哈!
All simple and healthy dishes, except the fried chicken,hehe. Hmmm...not too bad...
The vege is very crunchy but it would be better if it is more salty. The potato pork ball is good if we deep fried the potato for longer time. Anyhow not to critic, because I cooked it as well =D





这些就丰富多了,有我最爱的大虾,大头跟我说,他知道我爱所以特地叫妈妈煮的,呵呵。豆瓣酱鱼肉媲美我在煮炒档吃的哦。
These dishes looks more generous ya...my favourite big prawn, specially cooked for me as what dear told me. =P The fish is as delicious as the one i ate at chu char stall.
